Ingredients
- 2 eggs
- 2 tbsp of oil
- 75 g of chorizo, sliced
- 1 tin of baked beans
- 3 spring onions, chopped
- 1 pinch of chilli flakes
- 1 jar of passata
Method
Step 1
Heat the oil in a small frying pan. Chop the chorizo and add it to the pan along with the chilli flakes. Fry them together for 2 mins, stirring frequently.Step 2
Pour in the passata and baked beans and bring to the boil, reduce heat and simmer for a minute.Step 3
Reduce the heat to medium low and use the back of a spoon create two dips in the tomato mixture as best you can.Step 4
Crack an egg into each hollow, sprinkle parmesan (optional) over the eggs and place a lid on top of the pan.Step 5
Leave the eggs to cook for about 5-6 mins or until the whites are cooked with runny yolks.Step 6
Season to taste and add chopped spring onions to garnish.Step 7
Serve and enjoy.
