Ingredients

  • 3 tbsp of tomato sauce
  • 1 carrot
  • 350 g of canned borlotti beans
  • 4 burger buns
  • 3 tsp of sunflower oil
  • 70 g of natural breadcrumbs
  • 60 g of red leicester, grated
  • 300 g of canned blackeye beans
  • 1 large bunch of little gem lettuce
  • 1 onion

Method

  1. Step 1

    Heat half the oil in a pan, add the onion and cook over a low heat for 5 minutes, until softened.
  2. Step 2

    In a food processor blitz the cooked onion with the grated carrot, beans, breadcrumbs and ketchup until evenly mixed.
  3. Step 3

    Shape the mix into 4 burgers.
  4. Step 4

    Add the remaining oil to the pan and fry the burgers for 5 minutes each side, until golden brown and piping hot.
  5. Step 5

    Serve in a bun with lettuce and grated cheese.
