To make your own pastry first you need to rub the butter into the flour with your finger tips to create a sandy texture.

  2. Step 2

Add the water and mix together to achieve a smooth pastry that’s not too wet or too dry, and allow to rest in the fridge for 20 minutes before using.

  3. Step 3

Preheat an oven to 180°C Grease and line a flan case with the pastry and chill for 15 minutes.

  4. Step 4

Cover the base and the sides of the pastry with a piece of foil and bake for 15 minutes.

  5. Step 5

Fry the onions in a pan until golden brown and soft. You can use any filling, such as chopped tomatoes, leftover vegetables or even bacon leftover from breakfast.

  6. Step 6

Beat the eggs with the milk to make a custard.

  7. Step 7

Stir in the onions, the cheese and season.

  8. Step 8

Pour the filling into the baked pastry shell.

  9. Step 9

Bake in the oven for 25-30 minutes.

The quiche should be set and not wobbly in the centre when shaken gently.

  11. Step 11

    Allow to cool before serving.
