Bara brith, or "speckled bread", is a traditional Welsh fruit loaf. Our version is baked using self-raising flour instead of the traditional yeast method, however it is delicious served sliced and buttered. Yum.Time and servings

Ingredients
- 1 large of egg, beaten
- 100 g of unsalted butter, melted and cooled
- 15 cubes of sugar, roughly cut
- 2 tsp of ground mixed spice
- 1 orange, zest only
- 400 g of mixed dried fruit
- 200 g of strong tea, strained
- 300 g of self-raising flour
- 150 g of light muscovado sugar
Method
Step 1
Preheat the oven to 170ºC/150ºC fan/Gas 3. Grease and line a 1.2-litre non-stick loaf tin with non-stick baking parchment.Step 2
Add the sugar to the dried fruit mix and stir well. Add the orange zest, butter and beaten egg and stir together.Step 3
Sieve the flour and mixed spice into the bowl and stir everything well.Step 4
Spoon the mixture into the loaf tin. Scatter over the sugar cubes.Step 5
Bake for 1 hour 15 minutes or until a skewer inserted into the centre comes out clean.Step 6
Leave to cool completely in the baking tin. Serve sliced and buttered.
