Ella’s Kitchen Banana + Coconut Pancakes coated in yoghurt and desiccated coconut. The perfect foodie activity to keep little hands busy!

Ingredients

  • 220 g of self-raising flour
  • 1 Ella’s Kitchen Bananas + Coconut pouch
  • Decoration: Greek yoghurt, desiccated coconut, strawberries and blueberries (quantities to taste)
  • 180 ml of semi skimmed or whole milk
  • 2 eggs

Method

  • Step 1

    Sieve the flour into a bowl.
  • Step 2

    Crack the eggs into the bowl.
  • Step 3

    Squeeze the pouch into the bowl.
  • Step 4

    Slowly add the milk whilst whisking until all of the lumps have gone.
  • Step 5

    Heat a lightly oiled frying pan on a medium heat + ladle a small amount of mix into the pan. Flip over when you start to see holes appearing all over the surface (1-2 minutes per side).
  • Step 6

    Take one whole pancake and two quarters of another to make the ears.
  • Step 7

    Spread with Greek yoghurt and sprinkle with coconut.
  • Step 8

    Use the strawberries to make the ears and nose, blueberries for the eyes.
