With no added sugar, this recipe for Banana and Oat Muffins makes a great choice for an alternative breakfast.

Ingredients

  • 0.5 tsp of bicarbonate of soda
  • 2 tsps of baking powder
  • 2 tsps of vanilla extract (12g)
  • 250 g of skimmed milk
  • 100 g of walnuts, Half for the mix and 1/2 for decoration
  • 2 tsps of cinnamon
  • 120 g of honey
  • 2 eggs
  • 3 mashed bananas
  • 300 g of rolled oats
  • 0.5 tsp of salt

Method

  1. Step 1

    Preheat the oven to 180oc.
  2. Step 2

    Blend all of the ingredients together except for the nuts.
  3. Step 3

    Stir half the nuts through the batter.
  4. Step 4

    Let the batter mix rest in the fridge for 10 minutes (if it's too whipped it wont hold its shape when baked, and it gives time for the rising agents to start working).
  5. Step 5

    Place your muffin cases in the muffin trays and fill to about 3/4 full.
  6. Step 6

    Top your muffins with a sprinkle of oats and walnuts.
  7. Step 7

    Bake for 30-35 minutes until a skewer or cocktail stick is inserted it comes out clean.
