
Baked Cod with Mediterranean Beans

This recipe is healthy, full of flavour, and utilises the Jan Price Cut cod loin and bold beans for a quick, warming January meal.Time and servings

Ingredients
- 2 Cod Loin fillets, pat dry
- ½ tin Napolina Chopped Tomatoes
- ½ jar Bold Bean Queen White Cannellini Beans, drained and rinsed
- 300g Morrisons The Best Salad Potatoes, Halved or quartered
- 100g Morrisons The Best Tenderstem Broccoli
- Fry light olive oil spray
- 2 cloves garlic, minced or finely chopped
- 1 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
- 1-2 tsp Lemon Juice, optional
Method
Step 1
Preheat your oven to 200°C / 180°C Fan / Gas Mark 6.Step 2
Place the halved Morrisons The Best Salad Potatoes on a baking tray. Spray lightly with Fry light Olive Oil Spray and season with salt, pepper, and oregano.Step 3
Roast the potatoes in the preheated oven for 15 minutes.Step 4
While the potatoes roast, combine the Napolina Chopped Tomatoes, 1/2 jar of drained Bold Bean Queen White Cannellini Beans, minced garlic, and a pinch of salt and oregano in a small oven-safe dish or skillet.Step 5
Pat the Cod Loin fillets dry. Season the cod generously with salt, pepper, and a sprinkle of oregano.Step 6
After the potatoes have roasted for 15 minutes, remove the tray from the oven.Step 7
Nestle the seasoned cod fillets into the bean sauce dish.Step 8
Place the bean sauce dish and the remaining half of the Morrisons The Best Tenderstem Broccoli onto the potato tray. Season the broccoli and spray lightly with Frylight.Step 9
Return everything to the oven and bake for a final 12 to 15 minutes. The fish should be opaque and flake easily when done.Step 10
Serve immediately alongside the roasted potatoes and broccoli.
