Bacon and Pesto Sandwich

A delicious bacon sandwich for two. Serve for breakfast - or anytime you fancy.

Ingredients

  • 6 basil leaves
  • 2 ciabatta rolls
  • 6 rashers of streaky bacon
  • 1 drizzle of olive oil
  • 1 tbsp of pesto
  • 8 tomatoes

Method

  1. Step 1

    Preheat the oven to 200C fan/220C/gas 7
  2. Step 2

    Place the vine tomatoes on a baking tray. Drizzle with olive oil and season with salt and pepper. Place into a hot oven for 10 minutes.
  3. Step 3

    Meanwhile, heat a griddle pan or frying pan over a high heat. Griddle or pan fry the streaky bacon until cooked and crispy to your liking. Set to one side.
  4. Step 4

    Slice the ciabatta rolls in half and warm on the griddle pan for 1-2 minutes.
  5. Step 5

    Spread the pesto onto the base of the warmed ciabatta bread. Crush the roasted tomatoes on top of the pesto. Top with the cooked bacon and basil leaves and ciabatta lid.
