Aubergines are at their best barbecued - and it's the easiest way to cook them. You'll love the hot, oozing mozzarella in these Italian-inspired wraps.

Ingredients

  • 10 g of basil leaves
  • 2 aubergines
  • 4 tbsp of sundried tomato paste
  • 200 g of mozzarella
  • 2 cloves of garlic
  • 4 tbsp of olive oil
  • 1 stella artois premium lager beer bottles
  • 2 beef tomatoes

Method

  1. Step 1

    Carefully plunge the aubergine slices into a pan of boiling water. Cook for 4 minutes then drain well. Lay them flat on a clean board or work surface.
  2. Step 2

    Mix together the tomato paste, garlic and basil and spread a little over each aubergine slice.
  3. Step 3

    Top with mozzarella and tomato slices and fold over, securing each with a cocktail stick.
  4. Step 4

    Brush with olive oil and grill or barbecue for 2-3 minutes per side.
  5. Step 5

    This dish goes well with Stella Artois Premium Lager.
