Ingredients
- 2 large chicken breasts, cut into bite-sized chunks
- 3 tablespoons of cornflour
- 1 tablespoon of vegetable oil
- 1 teaspoon of sea salt
- 1 teaspoon of cracked black pepper
- Half a teaspoon of garlic granules
- 1 red chilli, finely sliced
- 1 green pepper, sliced into strips
- Half an onion, sliced
Method
Step 1
Start by popping your chicken chunks into a bowl with the cornflour, salt, black pepper, and garlic granules. Give it all a good mix until the chicken is well coated and looks a bit chalky. Drizzle over the oil and toss it again to help that coating crisp up.Step 2
Put the chicken into the air fryer basket in a single layer. Cook at 200°C for about 8 minutes, giving the basket a good shake halfway through.Step 3
Once the 8 minutes are up, slide the basket out and tip in your sliced peppers, onions, and chilli. Give everything a proper shake so the veg gets a bit of the seasoning and oil from the chicken.Step 4
Slide it back in and cook for another 4 minutes. You are looking for the chicken to be golden and crispy, and the veg to be softened but still have a bit of a bite.Step 5
Serve it up straight away while it is piping hot. It is lovely on its own as a snack or piled high next to some egg fried rice.
