
Ingredients
- 800g of floury potatoes, like Maris Piper or King Edward
- 2 tablespoons of goose fat or vegetable oil
- A good pinch of sea salt
- A sprig of fresh rosemary or thyme
Method
Step 1
Start by peeling your potatoes and cutting them into decent-sized chunks. Pop them in a pan of boiling salted water and let them simmer for about 8 minutes. You want the outside to be soft, but you don't want them falling apart.Step 2
Drain the potatoes in a colander and give them a really good shake. This is the most important bit, you want to scuff up the edges until they look a bit furry. That "fuzz" is what turns into the lovely crunchy bits in the air fryer.Step 3
Leave them in the colander for a minute or two to let the steam escape so they are nice and dry.Step 4
Put your fat or oil into a bowl, add the potatoes, and toss them gently until they are well coated. Sprinkle over the salt and your herbs if you are using them.Step 5
Tip them into the air fryer basket and cook at 200°C for about 25 minutes. Give the basket a shake every ten minutes. When they are a deep golden brown and sound crunchy when you move them, they are ready to be served up alongside some proper gravy.
