Ingredients

  • 2 large chicken breasts (approx. 150g–200g each)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika (use smoked paprika for a deeper flavour)
  • Optional: a pinch of dried oregano or chilli flakes or other preferred spices
  • Optional: rice & vegetables, to serve

Method

  • Step 1

    If your chicken breasts are very thick on one side, gently flatten them with a rolling pin so they are an even thickness. This ensures they cook perfectly at the same time.
  • Step 2

    Pat the chicken dry with kitchen paper. In a small bowl, mix the oil and all the spices. Rub the mixture all over the chicken breasts until they are evenly coated.
  • Step 3

    Place the chicken in the air fryer basket in a single layer, ensuring they aren't overlapping. Cook at 200°C for 10-12 minutes.
  • Step 4

    Halfway through the cooking time (5-6 minutes), flip the chicken breasts over to ensure an even, golden finish on both sides.
  • Step 5

    Once cooked (the juices should run completely clear), remove the chicken from the air fryer and place it on a plate. Cover loosely with foil and let it rest for 5 minutes. This allows the juices to redistribute, making the chicken tender.
  • Step 6

    Slice and serve alongside rice, salad or steamed vegetables.
