Ingredients
- 2 large baking potatoes
- 1 tablespoon of sunflower oil or olive oil
- A generous pinch of sea salt

Step 1
Give your potatoes a good wash and a scrub to get any bits of earth off, then dry them thoroughly with a clean tea towel. A dry potato is the key to a crispy skin, so do not skip this bit.Step 2
Take a fork and prick the potatoes a few times all over. Rub the oil over the skins until they are well coated, then sprinkle on the salt. The salt helps to draw out the moisture and gives you that lovely salty crunch we all crave.Step 3
