Kleine Zalze is an award-winning winery situated in the heart of the Cape Winelands, just two miles from Stellenbosch. Winemaking has taken place on its estate on a small scale since 1695, but in 1996, when Kobus Basson and his family purchased the property, the modern Kleine Zalze was born.

Vinification Details

Half of the wine was fermented in traditional open-top fermenters and the rest in stainless steel tanks. After complete alcoholic fermentation, the wine was separated from the skins using gravity to preserve freshness and flavour in the wine and went through malolactic fermentation in stainless steel tanks. The wine was aged 2nd and 3rd fill 300L French oak barrels for 12 months.
