Once at optimal ripeness, grapes are harvested and gently pressed. Clear juice is fermented at cool temperature using select yeast strains to promote bright aromas and crisp flavour. Individual components are precisely blended before finishing. A small percentage of Pinot Noir was incorporated, contributing subtle red berry aromatics. At canning, the wine is infused with CO2 creating a lively effervescence.
