Champagne Charles Mignon is based in Epernay in the heart of the Champagne region. Run by Bruno Mignon and his wife, Laurence, the Champagne house has been family owned and run for several generations and since 2003 has been a member of the prestigious Union des Maisons de Champagne.

Vinification Details

Grapes are hand harvested during the day before being transferred to the winery where alcoholic fermentation takes place at carefully controlled temperatures. The wine undergoes malolactic fermentation to round out the natural acidity, before being allowed to develop in bottle in the underground cellars of the Champagne House.
