The fruit was selected from vineyards mainly from the Murray Darling region. The climate is hot with high evaporation rates & generally low rainfall making irrigation essential. The climate is also continental, resulting in long sunny days and noticeably cooler nights. Modern viticultural & winemaking techniques mean that the climate can be seen as one of the region's strengths.

The fruit was harvested at optimum temperatures in the cool of the night. Fruit was crushed and the juice was pressed immediately, and fermented in stainless steel tanks. The free run and pressing fractions were treated separately. The juice was fermented at cool temperatures to preserve the primary fruit characters.
