Peach Crumble recipe
200g Sunshine Delights dried peaches
1 tbs sugar
80g plain flour
25g ground almonds
25g flaked almonds
80g butter (or vegan alternative)
Juice from 1 lemon
Lemon zest.

Directions:
Put 200g dried peaches in a cup of water in a small pan, and soak overnight. Add lemon juice, lemon zest and 1 tbs of sugar and mix together slowly bring to boil then cool.
Preheat the oven to 150ºC/300ºF/Gas mark 2. Remove the peaches and place in a 14x22cm deep-sided baking dish. Retain the liquid put the flour and ground almonds in a bowl and mix together. Cut the butter (or vegan alternative) into cubes and rub into the flour mixture with your fingertips, until it resembles breadcrumbs. Scatter the crumble over the peaches and sprinkle the flaked almonds on top. Bake in the oven for 45 mins until bubbling and golden. Cool for 5 minutes slowly heat the retained liquid and serve the crumble with (ice) cream (or vegan alternative), adding a small amount of the hot liquid on the side.
