Step One
Work the icing with your hands until pliable. Lightly dust the work surface and rolling pin with icing sugar.
Step Two
Roll out to the thickness of a pound coin. Always roll on one side, do not turn over.
Step Three
To cover a sponge, spread a thin layer of buttercream or boiled and cooled apricot jam onto the cake. To cover a layer of marzipan, lightly brush the marzipan with boiled and cooled water.
Step Four
Lift the icing over a rolling pin and place over the cake.
Step Five
Smooth the icing into position with the palm of your hand.
Trim away any excess icing with a sharp knife.
