Vinification Details
After being picked, the grass were cooled (cold maceration) to encourage colour and primary aromas extraction. They were then softly pressed with pneumatic pressure. Fermentation followed with natural grape yeasts at low temperature, then the wine was aged on the fine lees for 4 months to give more body and texture.
