Black Quinoa Salad and Orange Peanut Dressing
500g cooked black quinoa (about ½ a pack of Quinola Black Quinoa)
1/2 red onion
1 small yellow pepper
2 sticks of celery
2 grated carrots
1/2 a grated raw beetroot
Some fresh mint and basil
Dressing ingredients:
30g mustard
130g (1/2 a cup) of freshly squeezed orange juice
70g peanut butter
10g sundried tomatoes
25g lime juice (one lime's worth)
1 teaspoon (5 g) of Chipotle Hot Sauce
20g of agave syrup
1 pinch of salt
Cook 200g black quinoa in boiling water for 20 minutes and drain. Whilst the quinoa is cooking, blend all the sauce ingredients until a smooth. Chop up the vegetables for the salad. Rinse the cooked quinoa under cold water and mix in with the chopped vegetables and herbs in a salad bowl. Add the prepared sauce and serve up!

Boil - From Ambient. Cooking quinoa is just a simple as rice. Boil in a pan of water for 20 minutes, then drain in a fine sieve for an al dente result.

Preparation And Usage
Great hot or cold, quinoa can be used in starters and mains. Makes a wholesome base for a hearty salad.
How much should I cook? About 80g per head for a main dish. Cook up a batch and keep excess in the fridge for a quick quinoa fix another day.
