Luxury peach & blueberry crumble squares
Serves: 6-8
Prep time: 25 minutes
Cooking time: 50 minutes
Allergens: Gluten, Milk
Ingredients:
- 50g Blueberries
- 330g Opies peaches with 12 year old brandy, drained and syrup reserved
- 150g Unsalted butter
- 100g Sugar
- 200g Plain flour
- 1 Teaspoon salt
Method:
1. Preheat the oven to 200°C / 180°C fan / gas 6. Grease and line a 20cm x 20cm baking tray with a slight edge.
2. In a pan, gently warm the blueberries with a couple of tablespoons of reserved syrup until the berries soften and begin to burst.
3. Dice the peaches, add to pan and remove from the heat, leave to cool.
4. To make the crumble base, place the butter, sugar, flour and salt in a bowl or stand mixer. Mix (or rub together by hand) until the mixture is crumbly. Reserve one third.
5. Press the remaining mixture into the lined tray, flattening it to form an even base. Bake for 10-15 minutes or until lightly golden, then leave to cool.
6. Spread the cooled blueberry and peach mixture evenly over the base. Sprinkle over the reserved crumble mixture.
7. Return to the oven and bake for 20-25 minutes or until golden on top.
