Just add
750g chicken breasts, chopped
2 handfuls mixed lettuce
1 large red onion, finely sliced
Cherry tomatoes, halved
1 large avocado, mashed

Classic fajitas
1 Preheat oven 225°C (205°C fan assisted), gas mark 7.
Into a big bowl, toss chicken in 4 tablespoons olive oil.
Empty seasoning mix over the chicken and toss to coat. Place chicken on a baking paper lined tray in a single layer and bake for 20 minutes or until thoroughly cooked and crispy.
2 Heat the tortillas:
Microwave: pierce the pack and place it in the microwave. Heat for 35 seconds on full power (800 watts). Open the pack and separate tortillas.
Pan: Heat a pan and toast tortillas for 5 seconds on both sides. Wrap in a tea towel to steam.
3 Load tortillas with lettuce, crispy chicken, onion, tomatoes, avocado and saucy salsa. simply roll and enjoy!

Top Tip
Pimp your fajita by adding pickled sliced red onion. Add lime juice and stand for 5 minutes.
