Melanzane alla parmigiana
Aubergines tucked up in tomato sauce & bubbling with mozzarella
Prep 40 mins
Cook 50 mins
Serves 4 people
3 Aubergines
100ml Napolina olive oil
1 Onion, chopped
1 Clove of garlic, crushed
2 x 400g Napolina chopped tomatoes
1 Tsp chopped rosemary salt & pepper
Handful of basil leaves, roughly torn
125g Drained mozzarella, roughly torn
100g Grated parmesan extra basil
Preheat the oven to 200°C/400º F/gas 6
1 Trim the aubergines and slice lengthwise into 5mm thick slices. Layer in a colander, sprinkling each layer with salt. Set aside for 30 minutes.
2 Heat 2 tbsp of the oil in a pan. Add the onion and garlic and cook until softened. Add the tomatoes, rosemary and season with salt and pepper.
Simmer (uncovered) for 20-25 minutes.
3 Rinse the salt from the aubergine slices and pat dry with a kitchen towel.
Brush some baking sheets generously with oil.
Arrange the aubergine slices on the trays in a single layer and drizzle. Cook for 10-15 minutes.
4 Layer the aubergine slices in a shallow ovenproof dish with the tomato sauce, basil leaves and two thirds of the mozzarella and Parmesan. Finish with a final layer of aubergine, tomato sauce and the remaining cheeses.
5 Bake for 30 minutes until golden and bubbling.
Sprinkle with basil and serve to your favourite person.
