Thick Farmhouse Soup
Prep Time: 15 minutes
Soaking Time: 8-12 hours or overnight
Cooking Time: 1 hour 50 minutes
Serves: 4
Ingredients:
200g Country soup mix
1 tbsp Vegetable oil
1 Large onion, diced
2 Medium celery sticks, sliced
2 Large carrots, diced
2 Large potatoes, diced
3 Its Vegetable stock
1/2 tsp Dried mixed herbs
2 tbsp Tomato purée
Salt and black pepper
Method:
1. Soak the country soup mix to the on pack instructions, then drain and set aside until required.
2. Heat the oil over a medium heat in a large pan, then add the onion, celery, carrot and potato, fry for 5 minutes until the onion and celery have softened.
3. Stir in the stock, mixed herbs, pre-soaked country soup mix and tomato purée. Increase the heat to high and bring to the boil, then reduce the heat to low and simmer for 1 hour 45 minutes, stirring occasionally.
4. Season to taste and serve immediately.
To Serve:
Ladle generously into large bowls and serve with warm crusty bread.

Reduce the heat to low and simmer for 50 minutes, until the country soup mix has softened but is slightly firm to the bite. Drain thoroughly, rinse and use as required.
