Tabbouleh

Ingredients:
100g bulgur wheat
4 spring onions, finely chopped
1 garlic clove, crushed
150g cherry tomatoes, halved
1/2 medium cucumber, diced
15g fresh mint, finely chopped
1 tbsp olive oil
1 lime, juice only
Salt and black pepper
Method:
1. Cook the bulgur wheat to the on pack instructions, then drain and set aside to cool.
2. Mix the spring onions, garlic, tomatoes, cucumber, mint and cooked bulgur wheat together in a large bowl.
3. Gently stir in the olive oil, lime juice and season to taste.
4. Cover and chill for 2 hours in a refrigerator before serving.
To Serve:
As an accompaniment to grilled halloumi cheese, chicken or lamb.

Rinse 100g bulgur wheat thoroughly in cold water. Bring 400ml water of stock to the boil in a large saucepan on the medium hob ring over a high heat, add the bulgur wheat. Stir, cover with a lid, reduce the heat to low and simmer for 15 minutes until most of the water has been absorbed. Remove from the heat, drain off any excess water and stand for 10 minutes. Separate the grains with a fork and use as required. Serve instead of rice or mix into a salad.
