Vinification Details

1st fermentation: the manual harvest takes place at the end of September, the grapes are gently pressed and then let in steel tanks for the fermentation at 18/20°C for 3 weeks. 2nd fermentation called "Ripasso": The fresh wine then goes through the unique ¿ripasso¿ process, wherein it is passed through the must of Amarone. This second maceration promotes the extraction both of tannins, which give this wine its longevity, and of the rich dried-fruit aromatics of Amarone
