Quinoa with Cherry Tomatoes & Pinenuts.
Prep Time: 15 minutes
Cooking Time: 35 minutes
Serves: 4
Ingredients:
150g quinoa,
2 tbsp pine nuts,
1 tbsp extra virgin olive oil,
1 tsp mild chilli powder
1/2 medium lemon; finely grated zest and juice,
Salt and freshly ground pepper,
250g cherry tomatoes, halved.
Preparation method:
1. Cook the quinoa to the on pack instructions.
2. While the quinoa cooks, heat a large non-stick pan over a medium heat. Add pine nuts to the pan and cook for 3 minutes or until browned, stirring frequently. Set aside to cool.
3. In a small bowl mix together the extra virgin olive oil, lemon juice and zest, chilli powder and seasoning to make a dressing.
4. Combine all ingredients together with the dressing.

Rinse 100g quinoa thoroughly in cold water. Bring 300ml water or stock to the boil in a large saucepan on the medium hob ring over a high heat, add the quinoa. Stir, cover with a lid, reduce the heat to low and simmer for 20 minutes until most of the water has been absorbed. Remove from the heat, drain off any excess water and for best results leave to stand for 10 minutes. Separate the grains with a fork and use as required. Serves approximately 3.
