Simmer together crème fraîche, Dijon mustard and a couple of sprigs of finely chopped tarragon in a pan. Once combined pour over browned chicken and bake in the oven until chicken is cooked through.

Lock in flavour by freezing. Put finely chopped washed leaves in a freezer bag before freezing. Use straight from frozen.
Must wash before use.
