Mackerel with Ginger and Sesame
Serves 4

Try this quick and easy recipe with whole mackerel for a delicious blend of rich fish and savoury South Asian flavours. A delicious family supper when served with rice or noodles.
Ingredients:
- 4 fresh whole mackerel, cleaned and heads removed
- 5cm piece root ginger, peeled and finely chopped
- 1 red chilli, deseeded and finely chopped
- 2 tbsp reduced-salt soy sauce
- 2 tsp sesame oil
- 1 bunch spring onions, trimmed and shredded
- 15g sesame seeds
Method:
1. Preheat the oven to 180°C/350°F/Gas 4. Line a baking tray with non-stick baking parchment and lift the fish onto it.
2. Mix together the ginger, chilli, soy sauce, sesame oil and spring onions and stuff into the belly cavity of each fish.
3. Sprinkle the sesame seeds over and bake for 20-25 minutes depending on the size of the fish.
4. When cooked, the flesh should flake easily and come away from the back bone.
Cook’s tip: Serve with rice or noodles - allow 50g uncooked weight per person and toss with a little fresh chopped coriander, if desired.

Timings are subject to weight and thickness of fish and are a guideline only. Bag may inflate during cooking. Not suitable for grill, barbecue or open flame. Do not reheat.
1. Place sealed bag on a baking tray and pierce film. Cook in the middle of a pre-heated oven at 180°C/356°F/Gas Mark 4, 14-16 mins for the required time. Ensure the product is piping hot, cooked through and the fish flakes easily with a fork.
2. Leave to stand for 1 minute. Serve and enjoy.
