How to Make the Perfect Fairy Cakes
Cooking appliances vary.
These instructions are given as a guide.
1. Set your oven to 190°C/375°F/ Gas Mark 5 and leave it to warm up.
2. Place the fairy cake cases into a cupcake tray, ready to fill.
3. Now, empty the sponge cake mix into a mixing bowl and add the egg and 3 Tbsp (45ml) of water.
4. Whisk the mixture together until it's combined and smooth. This should take about a minute with an electric whisk.
5. Next, spoon the mixture into the cake cases, dividing it as equally as you can.
6. Place the tray in the centre of your oven and bake for 10-12 minutes, or until your cakes are risen and golden.
7. When they're ready, take your fairy cakes out of the oven and leave them to cool on a wire rack.
8. While the cakes are cooling, empty the icing mix into a bowl and slowly add 2 tsp of water and mix until you have a smooth paste you can spread.
9. Once the cakes have completely cooled, spread the icing mix over the top.
10. Sprinkle with sugar strands, allow the icing to set and then serve - just try not to eat them all at once!

Top Tip
Always take your cakes out of the tin to cool; otherwise they'll carry on cooking and won't taste their best
