- 2 Salmon fillets
- 1 Red pepper
- 1 Medium potato
- 1 Red onion
- 80g Tenderstem® broccoli
- 2 Tbsp oil
Why not try swapping the salmon for chicken? For an extra finishing touch, garnish with sliced red chillies and spring onions.
Follow the 5 easy steps
1 Pre-heat the oven to 220°C, fan 200°C, gas 7. Dice the potato into 1 cm cubes, cut the red onion into segments, the red pepper into 2 cm chunks, and the broccoli into bite size pieces.
2 Put the potato, pepper, red onion, broccoli and dry seasoning with the oil in a bowl and toss until evenly coated.
3 Tip onto a tray and bake for 15 minutes.
4 Place the salmon on top of the vegetables and cook for 10 minutes.
5 Drizzle the sweet chilli sauce on top of the salmon and return to the oven for 5 more minutes until the salmon is cooked through.
