Chow Mein Stir Fry
1. Prepare 125g (2 nests) egg noodles according to instructions, drain, rinse with cold water, drain and set aside.
2. In a wok or large frying pan, heat a tbsp oil over a high heat, add 200g diced chicken (or aubergine) and stir fry for 2-3 minutes until almost cooked.
3. Add 125g sliced baby corn, a thinly sliced carrot, 75g sliced mushrooms, sliced spring onion, stir fry for 4-5 minutes.
4. Add cooked noodles and pour over sachet of Chow Mein Stir Fry Sauce, stir fry for 2-3 minutes until noodles are warmed through.
5. Add a splash of soy sauce (as required) and garnish with spring onions and serve.
