Oven cook - From Chilled. Preheat oven to 150°C/400°F/Gas mark 2. Heat a little oil in a pan and brown the pieces of meat, add vegetables, herbs and spices and cook for 10 minutes. Stir in 1 tablespoon of flour and 250ml of stock, transfer to an oven proof casserole dish, cover tightly, place in the oven and cook for 2 hours. Check regularly that the casserole is not drying out and add more stock if necessary. Allow to rest for 10 minutes before serving. For fan ovens, reduce cooking temperature by 20°C.
