A recipe for change
For a fresh ratatouille, fry chopped onion, pepper, courgette, aubergine and crushed garlic in oil until soft. Add tinned chopped tomatoes and a glug of water, then simmer until thickened. Serve with torn basil leaves and the sunblush® tomato & basil rice.
