Veggie Yaki Udon

What You Need
- 2 Bundles of Udon Noodles
- 1/2 Onion (sliced)
- 1/2 Chinese Cabbage
- 8 Shiitake Mushrooms
- 1 tbsp Vegetable Oil (for frying)

For the Sauce
- 6 tbsp Mirin
- 4 tbsp Soy Sauce

Optional for Finishing
- Sprinkle of chopped Coriander and Spring Onions

Cooking Instructions
1 Cook the noodles as per the instructions.
2 Heat the oil in a frying pan and add the mushrooms. Fry until they start to take on colour then add the onion and cabbage.
Continue to fry for approx. 5 minutes until they soften.
3 Mix mirin and soy sauce together and add to the pan. Mix well with the vegetables.
4. Add in the noodles and mix so everything is coated in the sauce.
5 Finish with a sprinkling of chopped coriander and spring onions. Serve piping hot.

To Cook Perfect Noodles
Add the noodles to boiling water and cook for 5 mins. Once soft, drain, then rinse in cold water and set aside.
