Oven cook - From Chilled. Pre-Heat Oven to 200°C, 400°F, Gas Mark 6, Fan Assisted 190°C. Season the meat, place in a roasting tray and cook on the middle shelf of the oven for 35 minutes per 500g, plus a further 35 minutes. Once cooked cover and keep warm, allow to rest for 15-20 minutes before carving.
Insert a skewer into the centre, the juices should run clear, if pink continue cocking.
