Kare-Kare Recipe: (Makes 4-6 servings)
Boil 1.1 lbs (1/2 kg) oxtail, cut into 1 1/2" lengths, in 8 cups (2 L) water. Lower the heat and simmer until meat is very tender; adding water as needed, leaving about 1 1/2 cups broth. In a heavy saucepan, sauté 1 tsp (2.6 g) minced garlic and 1 piece (40 g) sliced onion in 1 tbsp (15 mL) cooking oil. Add oxtail, stir fry and pour in 1 pouch (57 g) Mama Sita's Peanut Sauce (Kare-Kare) Mix, dissolved in 1 cup (250 mL) broth. Add the remaining broth. Stir and simmer until sauce thickens then add 1 piece (100g) eggplant, sliced into 1/2" lengths, and 6 pieces (100 g) sitaw (long green beans), cut into 2" lengths. Simmer for 3 minutes more stirring occasionally. Lastly, add 7 pieces (100 g) pechay (bok choy leaves) and simmer for 2 minutes or until vegetables are done. Serve hot with bagoong (sautéed shrimp paste) and rice.
Cooking Variation: Pressure cook 1.1 lbs (1/2 kg) oxtail in 3 cups (750 ml) of water for 45 minutes then proceed with the cooking procedures mentioned above.
