Garlic and Herb New Potatoes
Serves: 4 people (as a side)
Prep time: 10 minutes
Cook time: 12 minutes

Ingredients:

750g baby new potatoes
2 garlic cloves, crushed
50g unsalted butter
1 tbsp extra virgin olive oil
10g chives, finely chopped
10g dill, finely chopped
1 tsp Maldon Garlic Sea Salt
Cracked black pepper

Method:
Cut any larger potatoes in half so they are all a roughly uniform size, keeping the smaller one’s whole. Place a large pan of water on the hob and add the potatoes, then bring it up to the boil. Simmer the potatoes in the boiling water for 10 – 12 minutes or until tender. Drain the potatoes and then let them steam in the colander.

Place the butter into a small saucepan and onto a medium heat, letting it melt and bubble. Once melted, add the crushed garlic and let it simmer in the butter before taking the pan off the heat.

Place the potatoes into a large bowl and pour over the garlic butter, along with the tbsp of olive oil, chopped herbs, Maldon Garlic Sea Salt and plenty of cracked black pepper. Toss the potatoes so they are evenly coated and then serve.
