To buy:
300g boneless chicken thigh or plant-based substitute
1 red onion
1 bunch of coriander
1 lime

Fierce Flavours in just 4 Steps
Step 1
Prep: Slice the chicken and mix with the Las Chicas Pibil Cooking Paste (the smaller sachet) in a bowl - set aside and let the chicken marinate while you prep the rest. If you have time - leave to marinate for longer for even fiercer flavours! Pickle time! Chop the coriander, quarter the lime and save for later. Thinly slice the red onion and place in a bowl with 2 tbsp vinegar, a pinch of salt and half a tsp of sugar. Give it a little stir now and again as you prep the rest of the meal.

Step 2
Sizzle: Add a good glug of oil to a frying pan and cook the chicken on a medium heat for about 5 mins, giving it a good stir as you go. Then turn the heat down and simmer on low for another 5-7 mins until cooked through.

Step 3
Heat: Get your Las Chicas Tortillas nice and toasty by heating in a dry pan for 20 seconds on each side, or simply put them all in a microwave for 20s.

Step 4
Assemble: Taco time! Place a few pieces of chicken on the heated tortilla first, followed by the coriander, pickled onions, a generous drizzle of the Las Chicas Salsa Verde, and finally a squeeze of lime.
