Vinification Details

White grapes are gently pressed and the must transferred to temperature-controlled tanks. Red grapes undergo a soft maceration to draw out colour, delicate tannins and aroma, before the two are blended into an elegant cuvée. Selected yeast cultures are added and fermentation takes place at a controlled 15-16°C, coaxing out every nuance of the harvest. Once the perfect balance is reached, fermentation is halted and the wine rests on its yeasts for at least two months before bottling.
