Chicken Tikka (BBQ Mix)
Ingredients Required: Chicken, Quantity & Preparation: 1 1/2 kg
Ingredients Required: Indus Ginger Paste, Quantity & Preparation: 1 tbsp (25g)
Ingredients Required: Fresh Lemon Juice (or bottled), Quantity & Preparation: 5-6 Fresh lemons or 8 tbsp if using bottled
Ingredients Required: Indus Ghee/cooking Oil, Quantity & Preparation: 1/2 Cup (75g)
Ingredients Required: Indus Chicken Tikka Spice Mix, Quantity & Preparation: 1 bag

Steps of Cooking
1. Cut deep slashes into chicken pieces.
2. In a bowl mix together Indus chicken tikka spice mix, lemon juice and ginger paste. Add chicken and mix well ensuring marinade reaches into the deep cuts. Cover and chill leave to marinade for 2-3 hours, for best results leave overnight.
3. Place marinated chicken onto skews, grill or roast on a low heat.
4. Brush chicken with oil/ghee and keep rotating, repeat until chicken is fully cooked.
5. Serve with salad and mint dip.
