Recipes

Lamb, Apricot & Pearl Barley Casserole
Serves 4
Preparation time: 15 minutes
Cooking time: 1 1/2 - 2 hours
Ingredients:
1 tbsp vegetable oil
450g Diced casserole lamb
1 Medium onion, chopped
100g Whitworths Dried Apricots
75g Great Scot Pearl Barley
1 x 400g Can chopped tomatoes
600ml Lamb stock, hot
Salt and black pepper
Method:
1. Preheat the oven to 170°C (fan 150°C), Gas Mark 3.
2. Heat the oil in a frying pan and cook the lamb for 4-5 minutes, until browned on all sides. Add the onion and cook for 2-3 minutes until softened.
3. Add the apricots, pearl barley, tomatoes and stock, bring to the boil and then transfer to a lidded ovenproof casserole dish and cook in the preheated oven for 1 1/2-2 hours, until the lamb is thoroughly cooked.
4. Season to taste and serve with steamed seasonal vegetables.

Hob - From Ambient. No need to soak. Do not eat raw.
1. Rinse Great Scot Pearl Barley thoroughly, place into a saucepan & cover with plenty of cold water.
2. Boil for 10 minutes, reduce the heat & simmer for 30 minutes or until tender.
3. Drain & use.

Preparation And Usage

Cooking instructions:
1. No need to soak. Rinse thoroughly before cooking.
2. Place 100g of pearl barley into a large saucepan with 500ml of water.
3. Boil for 10 minutes, then simmer for 50 minutes until the pearl barley has softened but is slightly firm to the bite.
4. Drain, rinse and use.
