Crisp and zingy with intense gooseberry and green pepper flavours, tightly structured with a long finish and perfectly balanced acidity. Perfectly paired with a Caprese salad with fresh tomatoes, sliced mozzarella, and sweet basil, seasoned with salt, and olive oil.

Grapes were night harvested to the protect the delicate Sauvignon Blanc flavours. On arrival at the cellar the grapes get pressed in a reductive style, minimum oxygen exposure. The essence is to protect the delicate flavours of the Sauvignon Blanc that nature has so graciously provided us with.
