Whole grape bunches are gently pressed and the juice undergoes slow cooled fermentation. This preserves the grape's delicate aromatics and freshness.
The second fermentation takes place at a controlled temperature in pressurized stainless steel tanks. After a few weeks, the result is a fruity and fresh sparkling wine.
