Jerk Chicken & Pineapple Kebabs (Serves 4) 3 Tbsp Oil, 1 Onion, finely chopped, 2 tbsp Dunn's River Jerk Seasoning, 450g skinless boneless Chicken breast, cubed, 227g can Pineapple chunks, drained. Heat 2 tbsp oil in a frying pan. Add the onion and cook gently until soft. Leave to cool. In a bowl, mix together the onion, remaining oil and Dunn's River Jerk Seasoning. Add the chicken and mix thoroughly to coat with the marinade. Leave to marinade for 2 hours. Thread the chicken cubes onto the skewers, interspersing with the pineapple cubes. Grill or barbecue for 8-10 minutes or until cooked, turning frequently. Serve with rice and salad.
