You will need:
80g softened butter (or margarine) for the cookie
60g softened butter (or margarine) for the icing

Let's Get Baking
1 Preheat the oven to 200°C / 180°C fan / gas mark 4 approximately 10 minutes before putting in your bakes. Line a large
baking tray with greaseproof paper.
2 Mix together in a bowl the cookie mix and approximately half of the chopped pistachios (keep the remaining chopped
pistachios to decorate the cookies later).
3 Add 80g softened butter to the mix and combine with a spatula or wooden spoon, then use your hands to knead into a soft
cookie dough (the warmth of your hands helps bring the dough together).
4 Divide the mixture into 6 equally sized pieces (approximately 50g) and roll into ball shapes with your hands.
5 Place on the lined baking tray and gently flatten the cookie dough with the palm of your hand to form a disc shape,
approximately 1cm depth.
6 Bake in the centre of the preheated oven for 10-12 minutes until golden brown, then leave the cookies to cool on the tray
for 10 minutes.
7 Once the cookies have cooled, it is now time to make the pistachio buttercream. Carefully open the pistachio icing sachet
by cutting the top (the empty sachet can be used for piping your buttercream later).
8 In a bowl, mix the pistachio icing mix and 60g softened butter with an electric mixer or with a spoon until smooth and
spreadable.
9 Now for the fun part! To top the cookies with a swirl of buttercream, add the pistachio buttercream icing back into the
sachet, then carefully snip the bottom corner to create a piping bag.
10 Pipe a swirl starting from the centre of the cookie working out towards the edge. Or you can simply swirl the buttercream
onto the cookies with the back of a spoon or knife (it will still taste just as good!).
11 Sprinkle the remaining chopped pistachios on top of the cookies for the extra crunch.
12 Time for the best bit... tuck into your topped pistachio cookies! Store in an airtight container and eat within 3 days.
