What you need:
- 1 Medium egg
- 50g Softened unsalted butter
- 25ml (5 tsp) cold water
Method:
1. Preheat the oven to 180°C (160°C for fan assisted oven)/Gas mark 4 and line a cupcake tray with the cases.
2. Empty the cupcake mix into a mixing bowl and add the egg, butter and water. Mix until smooth and fully combined.
3. Spoon the mixture into the cases, dividing it as equally as possible.
4. Place the cupcake tray into the centre of the oven and bake for 20-25 minutes until the cupcakes are risen and golden, or until a knife inserted into the centre comes out clean.
5. While the cupcakes are baking, get creative and decorate the cupcake collars using the crayons.
6. Once the cupcakes are ready, remove from the oven and allow to cool in the tin for 5 minutes before transferring onto a cooling rack.
7. To decorate the cupcakes, snip the corner of the frosting sachet off and top each one with frosting using a palette knife or piping bag and nozzle.
8. Decorate the cupcakes using the sprinkles and secure the cupcake collars around each cupcake case.
