Harvested in the early morning to preserve freshness, the Viognier is gently pressed, and the juice is cold-settled before fermentation at low temperature in stainless steel. A small portion is matured on fine lees for added texture, with weekly bâtonnage. The wine is kept in tank until bottling to retain purity and aromatic precision.
