The grapes are sourced from well-tended, low-yielding bush vines between Béziers and the Bassin de Thau. Here, clay-limestone soils offer excellent drainage, encourage the vines to seek rich and varied nutrients deep down, and produce grapes with high acidity. Large rolled stones in the vineyards radiate heat and aid grape maturation while cool winds sweep off the nearby Mediterranean Sea to help keep the vines cool during the intense summer heat.

The grapes are harvested early in the morning when temperatures are cooler in order to preserve fresh acidity and balanced sugar levels. They are then directly pressed. Long and cool vinification takes place to maximise the flavour profile. Finally, after fermentation the two varieties are blended together before finding clarification and stabilisation.
